This vegetarian Handi Biryani uses the technique of traditional meat-based biryani and is made in a pot with vegetables and spices packed in. The fresh ingredients for Handi Biryani - tomato, onion, capsicum, carrot, cauliflower and french beans - are blended with tangy Indian spices like ginger, garlic, bay leaves, cloves, cinnamon, cardamom. For Vegetable Gravy: In Handi,add oil and onion,fry until translucent. Add cumin and ginger garlic paste,saute little and add tomato, stir well.
Instructions to make Veg handi biryani:
- Wash and soak rice for 1/2 hour after the rice soaked drain water with colander heat ghee in alarge pot and add 2green cardamom bay leaf 2cloves 2Cinnamon sticks 10 black pepper and saute now add1tbs salt and water around 2 glass let it come to boil once it starts boiling add rice to it let it cook uncovered on high flame until it cook 70 percent
- Heat oil in wok add Cinnamon sticks black cardamom star anise cloves saute for 1 minute add sliced onion fry them until onion turns golden when onions are cooking now add ginger garlic paste and saute until raw smell has gone off add vegetable tomatoes paneer and saute for 2 minutes
- When vegetable are cooking take a bowl add curd salt to taste red chilli powder coriander powder turmeric powder and whisk it well with spoon now add this curd to vegetable and cook for 2 to 3 minutes
- Now in a thick bottom pan or in handi layer half of the rice and sprinkle some half coriander leaves and mint leaves and half fried onions now layer veg Biryani gravy then layer the remaining rice sprinkle saffron milk kewda water remaining mint leaves coriander leaves and fried onions now secure the pot with lid and cook for 15 minutes on low flame
- Serve with bondi raita
Add turmeric powder,salt,coriander powder and red chili powder and give it a good mix. Now add cauliflower,french beans,carrots,potato,peas and capsicum, mix well.
