Pulao is basically the Indian version of pilaf, pilau, or pulav. Let's make prawns pulao in the instant pot! Wash the rice - Wash the rice until the water runs clear. Make the dry masala - put the fennel, green cardamom, bay leaf and cinnamon in a spice grinder and whizz to get a fine powder.

Steps to make Prawn pulao:
  1. Soak rice in water for half an hour
  2. Cut the vegetables. Make the ginger-garlic paste.
  3. Heat oil and ghee in a pan.
  4. Add spices. Cook for half a minute. Add onions and green chillies. Cook until the onions become translucent.
  5. Add ginger-garlic paste and pepper.
  6. Wait until the onions brown /caramelise. Add salt,turmeric, chilli powder. Mix thoroughly. Let it cook for 2 minutes.
  7. Add mint. Cook for a minute. Add coriander and cashew nuts. Cook until the cashews brown a little.
  8. Add the prawns. Mix carefully without breaking them. Cook for 1 minute (until they start to become slightly C-shaped)
  9. Add cumin powder, coriander powder, garam masala, dried Fenugreek. Mix well.
  10. Add water(1:1.5 ::rice:water). Put a lid on it until it starts to boil. Taste the water to check for salt and spice.
  11. Drain the rice thoroughly.
  12. Once the water boils, add the rice. Mix carefully.
  13. Cook it in a pressure cooker for 15 minutes on low flame.
  14. Mix and serve. Garnish with lemon and onions.
