- Prepare medium size potatoes
- Prepare for marination

- Take black pepper powder

It is perfect side for rice or noodles. The potatoes are lightly fried until crispy and brown, and then tossed in a sweet. Heat oil in a non-stick pan. Add potatoes and Shallow fry till light golden.
Steps to make Kung Pao Potatoes:
- Boil the potatoes in a pressure cooker. Cool, peel and cut into quarters. Marinate with cornstarch and salt and black pepper powder. Set aside for 15 mins
- In a wok heat oil and add potatoes to fry golden in colour. Should be crispy. Set aside
- In a wok heat oil and add ginger and garlic, whole red chillies, star anise and stir for a minute. Add chopped capsicum, chopped onions, soya sauce, red chilli sauce and stir for 3-4 mins.
- Add potatoes. Stir. Add cornstarch slurry and stir. Add little water and the consistency should be dry and not watery.
- Plate and enjoy a lovely starter
Mix cornflour in ¼ cup vegetable stock and set aside. Heat chilli oil in another non-stick pan. Add red chillies and sauté for a minute or until crisp. Add onion, ginger and garlic and sauté till soft. In a bowl add potatoes, corn-starch, black pepper powder, salt and toss it properly with light hands, make sure it is coated completely.
