- Take 3/4 cup oats
- Get 3/4 cup semolina
- Get 1/2 cup sweet corn
- Make ready 1/2 cup green peas
- Get 10-15 Cherry tomatoes, chopped
- Take 2 tablespoons Coriander leaves, chopped
- Make ready 1 teaspoon dill leaves, chopped
- Prepare 1 large onion chopped
- Take 3/4 cup curd
- Make ready 3/4 cup water
- Take 1 teaspoon baking soda
- Take 2 tablespoons oil/ghee, divided
- Get 1 teaspoon Black pepper powder
- Get 1 teaspoon cumin seeds
- Take Pinch Aesofotida
- Get Pinch Turmeric powder
- Take Salt as per taste
- Get 1 teaspoon Chaat masala
- Prepare Pinch Coriander powder
- Get Pinch Garam masala powder
I usually make them on a Sunday evening and Monday morning are so much easier. Life is good, atleast on monday mornings. Dry roast the semolina until they smell fragrant, leave it aside to cool for sometime. Now mix the baking powder, salt and ghee to the semolina.
Instructions to make Oats Semolina Savoury Muffins:
- Dry roast oats and semolina for 2-3 minutes. Remove in a bowl
- Add soda, salt, curd, 1 tablespoon oil/ghee and water to the mixture. Mix and set aside for some time.
- Preheat oven @180C after adding curd and water the mixture started bubbling.
- In a pan heat remaining 2 tablespoon oil or ghee and add cumin seeds, aesofotida and fry.
- Add onion and saute till golden brown.
- Add the chopped vegetables. You can add any veggies of your choice like mushrooms, grated carrot etc…
- Add all the spices. Here I have used Indian spices but you can always use any flavour of your choice like pizza seasonings, ginger-garlic paste etc….
- Mix these with oats and sooji mixture.
- Also add your chopped dill and coriander leaves and mix together well.
- These won't rise much. Pour the mixture in loaf or cake tin or in muffin cups like me and bake for 20 minutes. If baking in cake or loaf tin then the baking time will increase up to 30-40 minutes.
- Bake until toothpick Inserted comes out clean. Serve hot with sauce or chutney or as is.
- My family enjoyed this as an evening snack with tea😃
Add the curd as well and give this a mix. Now add the red chilly powder to the above mix and whisk. I decided to kill two birds with one stone. This gave birth to the idea of savory vegetable muffins recipe. I just needed to decide on the base cereal for this vegetable savoury muffins.
