I rarely make masala vada as I was not confident making these. We, in our families make plain paruppu vadai in which we don't add garlic, mint leaves or even fennel. Just make it in a different way. I will keep wondering what could be the factor. masala vada recipe

Instructions to make Masala Vada:
  1. Soak Chana Dal for 3-4 hrs in water, rinse well and drain water. Keep it aside.
  2. Add drained chana dal to a blender and make a coarse paste without adding water.
  3. In a chutney jar of a mixer, add garlic, ginger,cumin seeds, 4 sprigs curry leaves,2 green chilli, red chillies, cinnamon and cloves. Make a paste as smooth as possible without adding water.
  4. Add this masala paste to chana dal and blend it once again,such that it mix well.
  5. Take the chana dal mixture in a container, add salt, chopped onions, 2 sprigs of curry leaves chopped, 1 green chilli,chopped coriander leaves and dill leaves.Mix well everything together
  6. In a deep kadai,keep oil for heating. Once it's hot enough. Pinch a small amount of chanadal mixture,shape into vadas and put in hot oil.Fry on medium heat,flip and fry on both sides.
  7. Once it turns into nice golden colour,remove from oil and place on kitchen paper towel.
  8. Repeat the same procedure of frying for remaining chana dal mixture.Serve hot with a cup of masala chai or filter coffee
