These light feathery leaves called Shepu in Marathi are loaded with nutrients and extremely healthy. The recipe uses just a handful of ingredients, maximising on the distinct flavour of the dill leaves, and only enhancing or complementing it.

The ingredients needed to make Dill greens/ shepuchi bhaji:
- Prepare 1 bunch shepu/dill greens
- Prepare 1/2 cup moong dal
- Make ready 2 green chillies
- Prepare 3-4 garlic cloves
- Make ready 1 tsp cumin seeds
- Take 1 tsp mustard seeds
- Make ready 1 chopped onions
- Take to taste salt
- Take 2 tbsp oil
Shepuchi Bhaji is my favorite vegetable among all greens. Many people don't like shepuchi bhaji because of its smell ,some don't like its texture ,etc. Even my sister don't prefer to cook shepuchi bhaji. I know the vegetable is not very tempting, but as we need all greens in our diet and we can't eat spinach everyday.
Steps to make Dill greens/ shepuchi bhaji:
- Soak the moong dal for atleast 30 mins before preparing the dill stir fry
- Place a wok or kadhai on the heat and warm some oil in it.
- Add the mustard seeds,cumin seeds and allow them to crackle a little. then add green chillies and onions finely chopped toss these together
- Then add the moong dal and mix it well after few mins add the dill/shepu and mix it well add salt and let it cook for few mins.
- Take care not to burn the dal, and you can add a tablespoon of water, if required.
- Do not overcook it and your tasty dill greens/shepu ki bhaji is ready
Thoroughly wash and chop the dill leaves. In a pot add the rice, and the split chick pea lentil, and wash. Add chopped dill leaves, soaked moong daal & rice. Then add salt, mix well and cook till it is done. Wash thoroughly and chop into fine dice.
