- Boil a pot of water
- Prepare ice bath
- Remove stems from tomatoes
- Score an x on top of tomatoes
- Gently put tomatoes in boiling water
- Boil tomatoes just until you can see the skin start to peel
- Remove tomatoes and put immediately in ice bath
- Place tomatoes in blender and puree til smooth
- Poor tomato juice in bowl and repeat blender til all tomatoes are smooth
- In deep sauce pot heat olive oil
- Mine garlic
- Chop onion to small pieces
- Add onion and garlic to sizzling olive oil
- Saute until onions are carmalized
- Add tomato juice to onion and garlic mixture
- Reduce heat to low
- Add basil, Italian seasoning, parsley, nutmeg, sea salt, ground sage, allspice, oregano, ground ginger, celery salt, ground pepper, crushed bay leaves, granulated sugar, cayenne pepper
- Still til all spices mixed
- Simmer 30 minutes
- Stir
- Simmer 15 minutes
- Chop end off carrot
- Add whole carrot to sauce
- Simmer 45 minutes, stirring occasionally
- Stir
- Simmer until cooked down into a spaghetti sauce thickness, stirring occasionally to not burn (it might take longer as I am in the mountains than it did me)
- Ground your meat or do vegetarian (we either do 1 lb ground Italian sausage and 1 lb ground hamburger or 2 lb ground buffalo) with desired herbs and spices
- Add cooked meat to spaghetti sauce
- Stir
- Remove carrot and discard or shred and add it in sauce
- Serve as spaghetti or goolash
