  2. Prepare 3 tbsp mustard paste

Fry both sides of the fish lightly and set aside. Add some more oil to the pan if needed. Add the kalonji and slit green chillies. When the spices crackle, add the mustard.

  1. Marinate the fish with pinch of salt and turmeric and just fry for a minute on each side.
  2. In a pan, heat 1 tbsp mustard oil. Add the ginger paste and saute for a minute. Then add the mustard paste, salt, turmeric, green chillies and sugar. Give it a good mix and let simmer for 4-5 minutes. Add the fish and drizzles 1 tsp mustard oil from the top.
  3. Add 1/2 cup water to adjust the gravy consistency and cover and cook on low for 3-4 minutes. Your dish is ready to be served.

Add salt, slitted green chillies and fried fish pieces. Stir to coat all the fish properly. Add water according to the consistency of gravy you prefer but make sure there's enough to cook the fish. Once the fish is cooked through switch off flame and take the pan off the hob. Sprinkle liberally with fresh chopped coriander and pour a tablespoon of mustard oil over the surface to finish.
