- Preheat oven to 425°F.Line a shallow oven pan with aluminium foil.
- Add pork tenderloin to pan and coat with 1tablespoon of cooking oil. Set aside
- In a bowl mix all the rub ingredients together. Reserve 2 teaspoons for the potatoes. Rub the rest on the tenderloin.
- Clean potatoes and cut into 3/4 to 1inch chunks. Toss the potatoes with remaining oil and rub.Place potatoes in the pan around the tenderloin. Add pan to preheated oven and cook until pork temps to 145°F.mine took about 35 minutes. Remove from oven cover with foil for 5 minutes before cutting tenderloin.
- While tenderloin and potatoes are cooking, add all dipping sauce ingredients to bowl and mix. Refrigerate until ready to serve.
