Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Season both sides of the fish with salt and pepper, if desired. Heat olive oil in a large saucepan over medium-high heat until shimmering. Season salmon all over with salt and pepper. In a large skillet over medium-high heat, heat oil.
