- Make ready 2 cups wheat flour

- Get 1 tsp ajwain
- Prepare 1 tsp jeera

Methi muthia are steamed or fried dumplings made from chickpea flour and fenugreek leaves/methi. There are various ways of making muthia… I made these a few day later after making the methi thepla. I made both versions of methi muthia, steamed and fried. I was partial to the steamed version.
Instructions to make Ghav bajra na muthia:
- Mix all ingredients together and make dough
- Make dough and make cylindrical shape as shown
- Make this shape with all dough and put it in a steeming tray and put it in a steemer for 30 mins on medium flame.
- After 30 mins check with the help of knife whether it's cooked properly by putting it inside one of the Muthia. If the knife comes out easily consider it's done and ready. Then cut them into small pieces as shown in the picture.
- Now put 2tbls oil in a pan when oil become warm add popping seeds (tal) when it starts popping add the cut pieces of Muthia and fry till golden brown the flame should be medium.
- When the Muthia is done completely remove it from the pan and garnish as per your preferable ingredients.
Khichdi na Muthia is a staple dish of Gujrat cuisine which cooked in each and every Guajarati family. This time I shared steamed muthia recipe which made from leftover khichdi. I used simple khichdi recipe which made from rice and green lentils with little salt. Muthia are made from leftover cooked rice and simmer in yogurt-spices gravy.
