- Make ready Biryani
- Get 2 cup Long grained biryani rice
- Take 2 1/2 cup Diced vegetables (onions,beans,cauliflower,green peas,potatoes,carrots)

- Get 10 piece Cashewnuts
- Get 1 Garam Masala (2-3 cloves,cinnamon stick,2 bay leaves,3 star anise,4 peppercorns,2 cardamoms,mace)

- Get 2 tbsp Sour curd
- Prepare 2 tbsp tomato puree
- Prepare 1 tsp cumin powder
- Take 2 tsp corainder powder (you can use chopped fresh corainder leaves instead)
- Make ready 2 chopped green chillies
- Prepare 1/2 tsp Fenugreek powder
- Take 1 tsp red chilli powder
- Make ready 1 tsp Turmeric powder
- Make ready 2 cup Paneer (you can also use mushrooms)
- Take 4 tsp Refined oil
- Get 1 cup water
- Take 1 Salt to taste
- Make ready Raita
- Prepare 1 cup Diced cucumber,tomatoes & onions
- Prepare 1/3 cup chopped corainder leaves & green chillies
- Make ready 2 cup sour curd
- Prepare 1/3 cup water
- Take 1 Salt to taste
It's also vegetarian, vegan, gluten free and dairy free. Biryani is a typical dish which comes from Mughlai cuisine. It is a recipe which is made out of vegetables and rice. It is commonly consumed in India.
Steps to make Biryani (Vegan):
- Transfer the diced vegetables to a mixing bowl.Add sour curd, tomato puree, fenugreek powder, cumin powder, coriander powder, chilli powder, green chillies,turmeic and salt. Mix well and marinate for 1 hour.
- Grind the cashews into a fine paste.
- Heat oil in a wok.Add the garam masala and fry for 1 min.
- Add the cashew paste. Fry for 4-5 mins and then add the marinated vegetables.Cook the vegetables till they are done. Remove from fire.
- Wash the rice and transfer to a pressure cooker. Add the cooked vegetables,1 cup water,milk,paneer ghee and salt and mix well.Cover the lid and allow to cook for 13-15 mins or 2 whistles.Remove from stove.
- Allow to stand till the steam is let off. Remove the cover and let it stand for another 5 mins. Serve with raita.
- For Raita : Mix all the ingredients given for making raita in a bowl and it's prepared.

The addition of fried raisins and cashews add a sweet nuttiness to the biryani. Also fried curry leaves as garnish along with cilantro and mint is a typical Kerala or South Indian touch to this dish.
