- Take 1 large sized beetroot, peel off it & grate it.After grating,grind it in mixture for smooth texture of burfi.
- Take a non-stick pan,heat it & add one tsp of desi ghee, grind beetroot mixture in it & cook it for 3-4 minutes on medium flame.
- Now add 2 cups of milk,1 cup of fresh cream & cook it for about 10- 15 minutes.After some time add sugar as per taste & cook again.
- When mixture becomes slightly thick,add milk powder,grated coconut,elaichi powder to it & cook it for 4-5 minutes, finally add chopped dry fruits, raisins & melon seeds & mix it completely.
- Cook it again until entire mixture leaves the pan & forms a ball.
- Take any plate,grease it & spread mixture uniformly & rest it for about 1 hour.
- After 1 hour cut into pieces & decorate with cashew.Beetroot burfi is ready.
